Sparkling dry wine – Controlled Origin Denomination
White wine – Alc. 11,5% Vol. – 75 cl.

Location: Grape from vineyards in the municipality of Monti, (North-East of Sardinia Region) at 1000 -1100 feet above sea-level.
Soil: Sandy soils formed from granite rock weathering.
Production: 3 Tons/Acre.
Harvest: By hand the end of august beginning of september.

Pressing: Destemming and soft pressing.
Fermentation: This wine is made with the charmat process. A sparkling fermentation under pressure at 16-18°C (60-65°F). When fermentation is completed the wine is chill to -3 -4°C (28-29°F) and filter.
Maturation: 3 to 4 months in stainless steel tanks.
Bottling: Steril bottling under nitrogen; using natural corks.

Tasting notes: Vermentino sparkling wine obtained with the Charmat method with natural fermentation. Rich and fine and persistent perlage, pleasantly aromatic and fruity.
Food matching: Excellent as an aperitif with seafood and shellfish

Serving temperature: 7 – 8°C (45-46°F).
